To be fair I would like official versions if for no other reason than getting some half decent art of them.
One of the many good things about the Monster Manual Expanded books is not only did @Nixlord give us lots of good variants and updates for D&D monsters, his first books sold so well that he was able to commission some really excellent art for the third one and the reprints of the first two.

The paraelementals and quasimental, even those from Ravenloft (mist, blood...) the cult of Thoon (Monster Manual V 3.5 Ed), the ethergaunts (Fiend Folio 3e), all the dragons with age categories. All the golems from all the editions. The planetouched species and the parageasies (even Abysal and Athasian)
I second ethergaunts!! I adore those aberrations, they're so cool!!

There are so many still missing that to me are part of the classic D&D. Some that I am missing coming back to D&D with 2024 are:

Eye of the Deep.
Lurker Above/Lurker Below.
Vodyanoi.
Pyro/Cryo-Hydra.
Gem Dragons.
Para and Quasi Elementals.
Gorbel.
Quicklings.

And really I want to see templates back. Let me make a skeletal tyrannosaurus or a vampire duck! One of the best things about 3.x and Pathfinder 1 was the templates.

Edit: There are also so many setting specific monsters from Krynn to Athas that could be brought back in.

The Gem Dragons reappeared in Fizban's Treasury of Dragons.

Strip the associations of Lankhmar: there's always a place for Nehwon Ghouls.
